One of the most popular dishes in the Italian kitchen is the "Spaghetti a la Vongole".

But, what are "vongole" exactly and how are they caught, processed, prepared and eaten?

In the summer of 2009, Madnav made a documentary about the work of the fisherman of the island Burano in the Venice Laguna. A whole night long he went fishing for vongole with fisherman Stefano Tagliapietra of Burano (nickname "Carolina") on his boat the Manuela.

After the catch, he was invited by Alfredo Lapponi of the Group Azurra Pesca in Cavalino to watch how they processed the vongole.

At the end Madnav went to his good friend Mirella Bainado, chef of the Ristorante Cirene, the restaurant of Patrik and Michele Bainado, at Ca'Pasquali in Cavallino, who showed him how to prepare the famous Spaghetti a la Vongole.

With special thanks to Stefano, Paulo, Alfredo, Mirella, Michele and Patrik.
